Recipe: Tomato Pie

I absolutely loveee tomatoe pie! My momma gave me this recipe, and she interpreted it from Paula Deen's. We made two pies the other week, and they turned out delicious. Here are some easy steps if you wanna give it try. 

Ingredients:

  • 4 tomatoes, peeled and sliced
  • 10 fresh basil leaves, chopped
  • 1/2 cup chopped green onion
  • 1 (9-inch) prebaked deep dish pie shell
  • 1 cup grated mozzarella
  • 1 cup grated cheddar
  • 1 cup mayonnaise
  • Salt and pepper

1. Preheat oven to 350 degrees F. 


2. Peal 4 large tomatoes and slice them about 1/4 inch thick. Place them down on heavy-duty paper towel, or put down two layers of paper towels. Sprinkle kosher salt over the tomatoes.

3. Cover your tomatoes with two layers of paper towels to soak up the access tomato juice. Gently pat down on the tomatoes but don't squish them!




4. Chop up 10 about basil leaves and a 1/2 cup of green onions.

5. Lay down one layer of tomatoes on the bottom your pie crust.


6. Sprinkle your chopped basil and green onions across your first layer of tomatoes.  Repeat steps 5 and 6 again until you have a few layers.
7. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes


Use a plastic spatula to even out the cheese topping
8. Place pie in the oven and bake for 30 minutes or until lightly browned, and voila


I like it extra crispy and dark, so we put it back in the oven to get this golden color:-)
